When I was a kid I would spend the night at my grandparents house and wake up to the smell of breakfast. I would lay there quietly and finally when the smell was too tempting I would find my way to the kitchen. My grandfather would be sitting at the table playing solitaire and my grandma would be in her housecoat cooking up a storm. There was only 3 of us eating but you would have thought the entire family was coming over with the amount of food she would cook.

I would sit down and she would pile my plate with food. I would eat until you had to roll me out of the kitchen and from there I would sit with my grandpa on his giant lounge chair and settle in for a day of watching The People’s Court. I remember I once said to my grandma “do you eat like this every single day?” To which my grandfather laughed and replied “I wish! She makes me eat cereal when you’re not here.” I totally thought he was joking because my grandma was an awesome cook and who wouldn’t want to wake up every morning and make a big breakfast? Well, I grew up and realized “ain’t nobody got time for that!” and started eating cereal for breakfast. Crap. Kid Brandy was so wrong.

Well to be fair – that was if I ate breakfast at all. However, on the weekend I LOVE me some big breakfast. I want everything I don’t feel like making on the weekdays. I want pancakes, I want waffles, I want bacon, I want eggs and I want fresh baked scones. BUT not just any scones. Scones with roasted strawberries.

Not even just normal roasted strawberries – black pepper roasted strawberries. That little pop of pepper helps elevate the strawberry sweetness LIKE WHOA! Which I know is a total culinary descriptor.

Prep Time: 20 minutes

Cook Time: 25 minutes

Total Time: 45 minutes

Ingredients:

For scones:

2-1/2 cups white whole wheat flour

1/4 cup dark brown sugar, packed

1 tablespoons baking powder

1/4 teaspoon kosher salt

6 tablespoons cold unsalted butter, cut into small cubes

1 cup cooled roasted strawberries

2 large eggs

1/4 cup vanilla Greek yogurt with chia seeds

1 tablespoons lemon zest

1-1/2 teaspoon vanilla bean paste

1/4 cup sanding sugar

For roasted berries:

2 cups halved or quartered strawberries (depending on size)

1/4 cup dark brown sugar

Fresh cracked black pepper

Directions:

Preheat oven to 375 degrees and line a baking sheet with parchment paper.

In a large bowl add white whole wheat flour, dark brown sugar, baking powder and kosher salt.

Add cold butter to the flour mixture and using a pastry blender mix into the flour until the flour is crumbly with little pieces of butter still present in the dough.

Add the roasted berries (try not to get too much of the juice into the mixture) to the flour mixture and lightly toss the berries in the mixture.

In a small bowl whisk together eggs, Greek yogurt, lemon zest and vanilla bean paste.

Add the liquid mixture into the flour mixture and carefully mix together, trying to not smash the berries too much. The mixture will be somewhat wet.

Flour a large cutting board or your counter and turn out dough. Flour your hands and form the dough into a 6 inch disk and about 3/4 inch thick. Cut into 8 pieces and place onto prepared baking sheet. If the dough is too soft let it firm up in the freezer for about 15 minutes before baking.

Brush the tops with milk and sprinkle with sanding sugar.

Bake for about 25 minutes or until fully cooked.

For roasted berries:

Preheat oven to 425 degrees and line a rimmed baking sheet with parchment paper.

Lay out the strawberries, sprinkle with dark brown sugar and a few cracks of fresh black pepper. Toss to combine. Roast for about 15-20 minutes or until the strawberries are slightly soft and their juices have released. Remove from the oven and let cool.
